Il peut \u00e9galement s\u2019utiliser dans les g\u00e2teaux, les jus et autres douceurs. Il aromatise divinement le th\u00e9. Dans la cuisine europ\u00e9enne, il est l\u2019indispensable \u00e9pice de la bouillabaisse fran\u00e7aise dont il rehausse le go\u00fbt et exalte celui des poissons qui la composent. Et que dire d\u2019une paella dont le riz doit son aspect ambr\u00e9 aux fameux pistils. Et le risotto dont le moelleux et la texture fondante seraient incomplets sans la pointe de safran qui sublime sa succulence.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/choumicha.ma\/images\/saisonniers\/Safran%204.JPG\" alt=\"\" width=\"350\" height=\"197\"\/><\/p>\n<p><strong>Le Safran au Maroc<\/strong><br \/>Le safran est pr\u00e9sent au Maroc depuis le IX\u00e8me si\u00e8cle. Longtemps, il fut utilis\u00e9 comme pigment, pour teinter la laine et dans la d\u00e9coration des plafonds en c\u00e8dre des kasbahs du sud aussi bien \u00e0 Taourirt, \u00e0 Telouet qu\u2019\u00e0 Rissani.<br \/>Aujourd\u2019hui, c\u2019est son statut d\u2019\u00e9pice qui lui assure sa notori\u00e9t\u00e9 et bien que le Maroc ne soit pas le premier producteur, sa cuisine est, plus que tout autre, li\u00e9e \u00e0 l\u2019envo\u00fbtante saveur du Safran.<br \/>De l\u2019or, le safran n\u2019a pas seulement la couleur mais la valeur \u00e9galement. Il n\u00e9cessite d\u2019importants investissements de d\u00e9part compte tenu de la chert\u00e9 des bulbes de qualit\u00e9, d\u2019autant plus que sa r\u00e9colte exige une importante main-d\u2019oeuvre.<br \/>Les familles des fermiers travaillent tr\u00e8s t\u00f4t le matin pour r\u00e9colter les fleurs avant l\u2019apparition du soleil. Ensuite, \u00e0 l\u2019abri de la lumi\u00e8re, il faut s\u00e9parer les stigmates du reste de la fleur ; ce sont ces stigmates qui, une fois secs, constitueront cette \u00e9pice. Toutes ces op\u00e9rations sont enti\u00e8rement manuelles.<br \/>Entre la r\u00e9colte et la pr\u00e9paration, il faut compter 3 \u00e0 4 heures de travail pour obtenir un gramme de safran sec !<br \/>Le safran sec est d\u2019un beau rouge \u00absang de b\u0153uf\u00bb. Il peut se conserver plus de trois ans. Son seul ennemi est la lumi\u00e8re, qui lui fait rapidement perdre ses vitamines et alt\u00e9rer peu \u00e0 peu son go\u00fbt.<br \/>Sa culture occupe des petites parcelles \u00e0 Debdou, mais surtout \u00e0 Taliouine et Taznakht, villages montagnards de l\u2019Atlas, \u00e0 1200 m d\u2019altitude, reli\u00e9 au reste du Maroc par le col du Tizin\u2019t est. La vall\u00e9e de l\u2019Ourika poss\u00e8de depuis 2003 une safrani\u00e8re.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/choumicha.ma\/images\/saisonniers\/Safran%203.JPG\" alt=\"\" width=\"350\" height=\"197\"\/><\/p>\n<p><strong>Le temps du Safran<\/strong><br \/>Du 31 octobre jusqu\u2019\u00e0 la fin de la cueillette, aux alentours du 15 novembre, se d\u00e9roule \u00e0 Tnine Ourika, une visite guid\u00e9e men\u00e9e quotidiennement par les producteurs. Apr\u00e8s un expos\u00e9 court, avec un support photographique pour pr\u00e9senter la plante, on peut visiter la plantation et assister en direct \u00e0 la cueillette, l\u2019\u00e9mondage et au s\u00e9chage. La Safrani\u00e8re propose \u00e9galement l\u2019initiation \u00e0 la cuisine marocaine sur demande et la visite des diff\u00e9rents espaces de culture.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/choumicha.ma\/images\/saisonniers\/Safran%202.JPG\" alt=\"\" width=\"350\" height=\"197\"\/>\u00a0<\/p>\n<p><strong>Une \u00e9pice d\u00e9licate<\/strong><br \/>Le safran ne fait pas partie des \u00e9pices dont l\u2019action agit instantan\u00e9ment. Il a besoin de temps pour se d\u00e9velopper et r\u00e9v\u00e9ler la subtilit\u00e9 de ses saveurs.<\/p>\n<p>Pour une utilisation optimale, on peut :<br \/>&#8211; Mettre les stigmates de safran \u00e0 tremper dans un bol d\u2019eau chaude toute la nuit. Le lendemain, filtrer \u00e0 travers une mousseline et ajouter l\u2019eau safran\u00e9e \u00e0 la pr\u00e9paration.<br \/>&#8211; D\u00e9poser les stigmates sur le couvercle de la marmite sur le feu. Quand ils sont chauds et secs, les frotter entre les paumes pour les r\u00e9duire en poudre, par-dessus le contenu de la marmite.<br \/>&#8211; Ajouter le safran en filaments dans la pr\u00e9paration en cours de cuisson. Il apportera en plus de sa couleur, sa saveur et un effet d\u00e9coratif aux plats cuisin\u00e9s.<\/p>\n<p><strong>COMMENT ACHETER SON SAFRAN ?<\/strong><br \/>Tout d\u2019abord, il faut toujours acheter son safran entier, en filaments. La couleur des filaments doit \u00eatre rouge vive \u00e0 grenat, l\u2019odeur forte, sucr\u00e9e, tr\u00e8s l\u00e9g\u00e8rement am\u00e8re (l\u2019amertume indique un safran de plusieurs ann\u00e9es).<br \/>Dans tous les cas, la mac\u00e9ration du produit doit laisser des traces jaunes sur les doigts.<\/p>\n<p><strong>ATTENTION AUX FRAUDES !<\/strong><br \/>Il faut 180 \u00e0 200 000 fleurs pour obtenir un kilo de safran. On comprend facilement, vu le co\u00fbt de la main-d\u2019\u0153uvre et donc de cette \u00e9pice, qu\u2019elle est sujette \u00e0 toutes sortes de manipulations pour, soit falsifier son apparence soit, lui faire prendre du poids.<br \/>La fraude se fait de plusieurs mani\u00e8res :<br \/>&#8211; Adjonction de produits v\u00e9g\u00e9taux. C\u2019est la plus commune des fraudes. Vendu sous forme de poudre, on incorpore au safran moulu de la poudre jaune servant de colorant. D\u2019autre part, les \u00e9tamines sont tr\u00e8s souvent broy\u00e9es avec les stigmates, d\u2019o\u00f9 une augmentation du poids non n\u00e9gligeable.<br \/>D\u2019autres plantes peuvent \u00eatre ajout\u00e9es aux stigmates entiers comme le carthame, le souci ou les barbes de ma\u00efs.<br \/>&#8211; Ajout de produits chimiques. \u00c0 la r\u00e9colte on r\u00e9cup\u00e8re le style, partie de la plante sans int\u00e9r\u00eat, on le colore chimiquement en rouge et on l\u2019incorpore aux stigmates.
